Our Sparkling Seyval opens with bright aromas of crisp green apple, juicy white pear and zesty citrus, lifted by delicate blossom and a subtle hint of almond that adds gentle depth to the clean, lingering finish. 

We chose to plant Seyval Blanc due to its ability to perform reliably in cooler vintages, whilst also being hardy enough to tolerate spring frosts. We have been so impressed with the results, finding the wines to be full of citrus and herbaceous notes alongside a mineral backbone. We are so excited to launch our Seyval Blanc sparkling, which has taken on savoury complexity from lees ageing.

Made from 100% Seyval Blanc, the fruit was all hand-harvested and whole-bunch pressed. Fermentation was in stainless steel and the wine underwent malolactic conversion, with some lees stirring. The wine spent 15 months on the lees before disgorgement.
