That resilience allows us to leave the grapes on the vine longer, waiting for full ripeness before harvest — and the difference in the glass is everything.\u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal leading-[1.7]\"\u003eMade from 100% hand-harvested Pinot Noir, the fruit was left on the skins for several hours before being gently pressed, drawing out that beautiful pale salmon colour without sacrificing freshness. Fermented in stainless steel with occasional lees stirring to add weight and structure, the result is a wine that's elegant without trying too hard.
